The fajita is one of those truly American dishes that reflects the history and traditions of America’s southwest. The term fajita means “little strip” and refers to the strips of grilled meat typically used to stuff fajitas. It is believed that the dish originated from Mexican cowboys in the 1930s who were traditionally paid in part with the ‘leftover’ or unwanted cuts of meat during cattle roundups. These strips of skirt steak or other thin cuts of meat were then flame grilled over open camp fires and served in tortillas.
When beef prices spiked in the early 1990s, many restaurants sought out cheaper cuts of meat. It is then that the modern fajita was born thanks to restaurants like Chili’s who marketed the dish as a hot new item. Studies found that the sound of fajita meat sizzling on hot iron platters actually drove sales of this authentically American dish.
To celebrate the fajita, the 1st Annual Fajita Festival Comes to Traders Village April 13-14. In addition to fajitas, the festival will feature live music throughout the weekend. The festival will run from 11:00 am to 5:00 pm and is free to attend – just remember $4 for parking. After you’ve had your fill of fajitas, stick around to enjoy the eclectic and exciting shopping Traders Village is known for, or take a ride on one of the many amusement park-style rides the open-air market offers.
